TOASTED COCONUT PIE

TOASTED COCONUT PIE
This recipe is from a former
co-worker named Emily.

1.  Make pie crust (or if you are like me, you go to the freezer section of the grocery store to get one)
2.  Beat 3 eggs in a large bowl
3.  Add the following ingredients and mix well:
  • 1 1/2 cups sugar
  • 1/2 cup melted butter
  • 4 teaspoons lemon juice
  • 1 teaspoon vanilla
  • 1 1/2 cups coconut
Pour mixture into the unbaked pie crust and bake at 350 degrees for 45 minutes or until a knife inserted half way between center and edge comes out clean.
Don't make this one unless you LOVE Coconut!
