Thai Chicken/Turkey Pizza


Thai Chicken/Turkey Pizza
OMG!  This Pizza is so good!

My friend Susan Miller and I went to a cooking class last Thursday night and this was one of the featured recipes.  I'm told it's modeled after a pizza served by the California Pizza Company.



 
Begin by making the Spicy Peanut Sauce
Combine the following ingredients in a sauce pan over medium heat.  Bring the sauce to a boil and boil for 1 minute.
  • 1/2 cup peanut butter
  • 1/2 cup hoisin sauce
  • 1 tablespoon honey
  • 2 teaspoons red wine vinegar
  • 2 teaspoons minced ginger (or more if you wish)
  • 2 minced garlic cloves
  • 2 tablespoons toasted sesame oil
  • 2 teaspoons soy sauce
  • 1 teaspoon vietnamese chili sauce (or dried chili flakes)
  • 1 tablespoon oyster sauce
  • 2 tablespoons water


  • Putting The Pizza Together
    Use a spoon to spread the sauce evenly over the pizza dough (I used a thin pre-made crust.  You could also use a mix or make homemade dough.)

    You will need the following items for topping:
    • 10 oz. of cooked chicken or turkey cubed
    • 2 cups shredded mozzarella cheese
    • 4 scallions, slivered diagonally (I used green onions because the produce guy made me feel stupid when I asked where the scallions were)
    • 1/2 cup white bean sprouts
    • 1/4 cup shredded carrot
    • 2 tablespoons chopped roasted peanuts
    • 2 tablespoons chopped fresh cilantro
    Cover sauce with half of the cheese, then add chicken/turkey pieces, green onions carrots and bean sprouts.  Sprinkle the remaining cheese on the pizza followed by the chopped peanuts.

    Bake at 400 degrees until cooked through and cheese is bubbling.  The last step is to sprinkle the cilantro on before serving.
