Mini Chocolate Cakes with Ganache - Made with Black Beans!

As I walked out of the gym tonight, I noticed a table with Weight Watcher recipes... I ran right home to try this one.

Preheat oven to 350 degrees.  Coat mini muffin tins with non stick spray.

Add the following ingredients to your food processor:
1 (15 oz) can of rinsed and drained black beans
1/2 cup sugar
1/4 cup cocoa powder
1/4 cup butter
3 eggs
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp vanilla
Purée until smooth then add 1/2 cup mini chocolate chips....pulse until combined.
Spoon batter into muffin cups.  Bake for 10 minutes.

Make Ganache
Mix 5 tablespoons of bitter sweet Chocolate chips and 1/4 cup water in microwave safe bowl.  Heat for 15 seconds....mix until smooth.   The instructions said to use a double boiler, but I'm too impatient for that.

Top each mini cake with approx 1 tsp of ganache and a fresh berry.   I didn't have berries in the house so ours are topped with a pecan.

Each cake is approx 74 calories.
